At the Seattle Convention Center (SCC), culinary inclusivity isn’t just a trend—it’s a commitment that’s helping to shape the future of events.
As dietary needs—including allergies, religious practices, and personal choices— become increasingly central to event planning, the pressure to deliver safe and satisfying culinary experiences has never been greater. Rising to meet this challenge, the SCC has responded with innovation, distinguishing itself as the first convention center in the country to employ a dedicated dietary chef. This pioneering move not only ensures that every guest feels seen and cared for but also redefines what it means to host events in today’s diverse and health-conscious world.
Joining the team in early 2025, Amelia Warfel, Chef de Cuisine Dietary Specialist, brings expertise and empathy to her role as SCC’s dietary specialist. Her culinary strategy centers on crafting menus that are meticulously tailored to meet the needs of guests with dietary restrictions without compromising on the quality and presentation of the menus.
“The most fulfilling part of my role is the moment when I personally get to share what I made for the guests, walk them through the ingredients, and assure them it’s safe to eat,” Chef Warfel said, “The joy that that brings them is beyond rewarding.”
Personalization has long been central to SCC’s catering philosophy.
More than 70% of event menus are adapted to suit the specific preferences and requirements of each group. Now, with a dedicated dietary chef, the center goes further—delivering creative solutions for complex restrictions. Whether guests require gluten-free, vegan, halal, or allergy-sensitive options, the culinary team ensures these dishes are as visually appealing and delicious as their standard counterparts.
For planners, having an on-site dietary chef means peace of mind. SCC’s culinary experts understand the importance of preventing cross-contamination and address every detail with precision, ensuring that meals are safe and enticing.
This attention to detail leads to more satisfied and engaged guests. When attendees feel their needs have been thoughtfully anticipated and respected, they’re more likely to leave with a lasting, positive impression.
The SCC culinary team partners closely with planners, navigating the complexities of event organization and attendee requirements. Their ongoing focus on safety, satisfaction, and innovation ensures that every gathering is welcoming and memorable.
From intimate meetings to large conventions, SCC’s approach centers on creating inclusive experiences at every table. The overarching goal: to ensure each attendee feels considered, comfortable, and valued—one thoughtfully prepared meal at a time.
